I’d be amazed if the three hundred year pause in the middle 1550-1850 could have been bridged by architect’s documents from the 13th Century but maybe our fellow poster from the city knows more.
A fairly large part had already been build over 300 years and then there was a 300 year break, because gothic fell out of fashion and this type of architecture is of course crazy expensive. This is why for centuries the old crane from the middle ages was basically the symbol for Cologne.
I’d say the finished parts are more or less as close as possible. Like Jimmy said, they found old architect documents and tried to re-create to the best of their knowledge in the 19th century. They certainly made the effort.

The Blue Mosque is opposite the Hagia Sophia and is considerably less ancient. Both are magnificent, although Hagia Sophia is historically more significant, the architecture of the Blue Mosque is more unified and cohesive.
