Lunch tomorrow ; Vegetable Pasta Bake

Wilt some (500g) spinach.
Griddle some red pepper and courgette slices that have been basted in olive oil and salt and pepper.
Cook your pasta , drain and then transfer to a large ovenproof dish and toss with olive oil , minced garlic and pesto.
Combine all the veggies then pour over a tin of diced tomatoes and mix well.
Scatter good quality cherry tomatoes (halved) on top.
Liberally sprinkle with a combination of mozarella , fresh parmesan and any other cheese you fancy and put basil leaves on top.
Cover with tin foil and bake for about 30 mins at 200.

Rick Stein’s latest series has an epic Chicken Cider recipe I tried last week. Rich as fuck but gorgeous.
Leeks fried in butter
Par boil carrots (my addition)
Stir fry chicken pieces, bite size.
Combine
Add pint of cider, double cream (all of it) smoked paprika salt and pepper.
Xfer to casserole dish (or use one to start with)
cover in sliced potatoes and good cheese with more paprika. Bake for 30 mins or until pots are tender. Bloody glorious. Use good cider though.

          Salmon , Brocolli , New Potatoes , Hollandaise.

Dinner : Blinis with Ricotta , Cucumber and Black Olive Tapenade

          Chicken Biryani   (slow method)

Format it properly:

Chicken Biryani in goal, a back 4 of Blinis, Ricotta, Cucumber, and Black Olive Tapenade (hear Blini’s a great left-back unlike Blind).

Across midfield, Salmon, Broccoli, New Potatoes, Hollandaise. Be wary of the wingers, Salmon’s prone to flopping about while Hollandaise is pretty slippery. In midfield, Broccoli and New Potatoes can be quite hard to get through if they don’t overcook it.

Up front, Mango and Lychee are this season’s power pairing, they complement each other really well. Classic big man-short man combination in a 4-4-facking-2.

Cucumber can be quite hard, but is rather fragile…
