I believe the side that has the argument that makes the most sense from what I think the situation approximately is. For instance, if an Arleigh Burke destroyer has been hit by an anti ship missile like Iran claims, that cannot be hidden and there would be casualties on the US ship. When the US then says it didn’t happen, I tend to believe that, since it’s a bit silly to lie about when it will be found out.
But point taken, neither has real credibility.

I’ll take anything the Iranians say about sinking destroyers with a fistful of salt.
That too with a hypersonic missile.
I doubt Iran has hypersonic missiles (they might have gotten some from China / NK / Russia ) but why would a ship need to be targetted with a hypersonic missile? Especially if it’s not an aircraft carrier.
Supersonic missiles do the job better and are cheaper as well.
